Ingrediënten:

  • ca. 400 g gezeefde tomaten
  • 1 takje rozemarijn
  • 125 g druivensuiker
  • 2 theelepels limoensap
  • 1 – 2 druppeltjes tabasco
  • zout
  • peper
  • olie voor het frituren
  • 6 witte champignons
  • 60 g zelfrijzend bakmeel
  • 1/2 ei
  • 2 eetlepels water
  • 2 theelepels koriander

Bereidingswijze

Dieet: Vegetarisch dieet, Lactosevrij dieet, Natriumbeperkt dieet

Breng de gezeefde tomaten met de rozemarijn aan de kook. Los de druivensuikerop in 1 dl kokendheet water. Voeg dit suikerwater toe aan de gezeefde tomaten enbreng het opnieuw aan de kook. Voeg het limoensap, de tabasco, het zout en depeper naar smaak toe. Laat het mengsel afkoelen. Draai van het tomatenmengsel ineen ijsmachine mooi sorbetijs. Of doe het mengsel in lage metalen schaaltjes enlaat het bevriezen. Schep het elk uur om met een vork. Herhaal ditdriemaal.Verhit de olie in een frituur- of ruime braadpan of wok tot 180 gradenC. Borstel de champignons schoon. Doe het zelfrijzend bakmeel in een kom en voeghet halve losgeklopte ei toe. Voeg lepel voor lepel het water toe en roer toteen glad beslag. Knip de koriander fijn en roer deze door het beslag. Haal dechampignons een voor een door het beslag, laat ze steeds even goed uitlekken enleg ze voorzichtig in de hete olie. Frituur ze in 2 minuten gaar en goudbruin,laat ze uitlekken en serveer ze met de tomatensorbet. Garneer met een takjekoriander.

Dit gerecht bevat circa 40 gram groente per persoon.
