Ingrediënten:
- 2 1/2 dl kippenbouillon
- 1/2 kipfilet
- 25 g pijnboompitten
- 200 g aardbeien
- 1 bosuitje
- ca. 35g rucola sla
- 2 eetlepels mayonaise
- 1 eetlepel basilicum
- 1 eetlepel citroensap
- 1 theelepel mierikswortel
- 2 harde volkorenbroodjes (of bruine pistolets)
- zout
- peper
Bereidingswijze
Breng de bouillon aan de kook. Kook de kipfilet in 10 minuten gaar en laatdeze afkoelen. Rooster de pijnboompitten op een laag vuur in een drogekoekenpan. Was dan de aardbeien of laat de aardbeien als ze uit blik komenuitlekken, verwijder de steeltjes en snij de aardbeien in vieren. Snij debosuitjes in dunne ringetjes. Was de rucola en dep het daarna goed droog. Snijde kipfilet in kleine blokjes. Snij de mierikswortel en basilicum fijn. Roer ineen grote saladekom de mayonaise met het citroensap, de mierikswortel enbasilicum tot een dressing. Breng het nog wat op smaak met peper en zout. Scheper de aardbeien, kip en bosui door. Snij de broodjes open en verdeel de rucolaover de onderste helften. Schep het mengsel met de aardbeien erop. Bestrooi hetmet de geroosterde pijnboompitten. Leg tot slot de bovenste broodhelften er weerop.
Dit gerecht bevat ca. 100g fruit en 35g groenten perpersoon.
