Ingrediënten:

  • 2 vleestomaten
  • 1/3 komkommer
  • zout
  • peper
  • 1 gele ui
  • 10 sprietjes bieslook
  • 1 eetlepel olijfolie
  • 100 g feta

Bereidingswijze

Halveer de tomaten en verwijder de pitjes en het sap. Schil de komkommer ensnij deze in de lengte door. Schraap er met een lepeltje de pitjes enzaadlijsten ui. Bestrooi de tomaten en komkommer aan de binnenkant met zout enzet de helften op z’n kop 15 minuten weg om uit te laten lekken. Pel intussen degele ui en snipper deze fijn. Hak de bieslook fijn. Snij de uitgelekte tomaat enkomkommer in kleine blokjes. Meng in een kom ui met komkommer, tomaat enbieslook. Breng op smaak met zout en peper. Laat de salade ca. 2 uur gekoeldstaan. Snij de feta in twee platte stukken. Warm de grill (250°C). Doe de fetaop een ovenvaste schaal of bord, bestrijk de stukken met de olie en grill defeta in ca. 4 minuten mooi bruin. Verdeel de salade over twee bordjes. Schep defeta erop, garneer met mooie lange sprieten bieslook en serveer direct.

Je hoeft de feta niet te grillen. Blokjes feta dor de saladescheppen kan ook.
