Ingrediënten:

  • 2 venkelknollen
  • 1 teentje knoflook
  • 4 eetlepels fijngesneden peterselie
  • 2-3 tomaten
  • 1 theelepel tijmblaadjes
  • 5 theelepels geraspte oude boerenkaas
  • 5 eetlepels gedroogd, verkruimeld witbrood

Bereidingswijze

Verwarm de oven voor op 225 c. Haal van elke venkelknol de 4 grote buitensterokken (bladeren) los. Kook de venkelrokken in ruim kokend water tot ze beetgaarzijn. Snijd de rest van de venkel in heel kleine blokjes en bak de blokjesvenkel samen met de knoflook 5-10 minuten op zacht vuur in de olie. Voeg tweeeetlepels peterselie en de tomaatblokjes toe en breng op smaak met zout enpeper. Vul de venkelrokken met dit mengsel (snijd eventueel een klein stukje vande venkelrokken, zodat ze goed blijven staan) en leg ze in de ovenschaal. Meng 2eetlepels peterselie met de tijm, kaas en broodkruim en breng dit mengsel opsmaak met zout en peper. Strooi het broodkruimmengsel over de gevulde venkel,druppel er nog wat extra olijfolie over en bak de venkel in +/- 20 minuten inhet midden van de oven tot de bovenkant gegratineerd is.
