  • 200 g champignons
  • 1 ui
  • olie
  • 1 teentje knolook
  • 25 g cashewnoten
  • 1/2 theelepel grove mosterd
  • 1 sneetje oud brood
  • 1 eetlepel kwark
  • peper
  • zout
  • 1 eetlepel paneermeel
  • 2 blaadjes bataviasla
  • 4 mini-broodjes

Bereidingswijze

Dieet: Vegetarisch dieet, Cholesterolbeperkt dieet, Vezelrijk dieet.

Laat de champignons in een zeef uitlekken. Snij de ui in stukjes. Verhit eenscheutje olie in een koekenpan en bak de ui zachtjes. Pers het teentje knoflookerboven uit. Maal de champignons in een keukenmachine grof. Doe de champignonsbij de ui en knoflook in de pan en bak ze enkele minuten op een hoog vuur alomscheppend mee. Doe het champignonmengsel in een kom en laat het even afkoelen.Verkruimel de boterham. Hak de cashewnoten fijn. Voeg de broodkruimels, kwark,mosterd, gehakte cashewnoten, zout, peper en paneermeel toe aan hetchampignonmengsel. Maak van het mengsel met de hand 4 kleine platte burgers.Voeg als het champignonmengsel te nat is wat paneermeel toe. Verhit een scheutolie in een koekenpan. Bak de champignonburgers aan beide kanten mooi bruin. Wasde sla. Snij de broodjes doormidden. Beleg de broodjes met een blaadje als enleg er de burgers op.
