- 1 aubergine
- zout
- 2 sjalotjes of 1 ui
- 2 tomaten
- 1 – 2 eetlepels olie
- 1 teentje knoflook
- 1 theelepel suiker
- 1 theelepel basilicum
- 1 eetlepel wijnazijn
- versgemalen zwarte peper
Bereidingswijze
Dieet: Vegetarisch dieet, Kippeneivrij dieet, Glutenvrij dieet, Lactose.
Was de aubergine, verwijder de uiteinden en snij hem in plakken. Pel desjalotjes of de ui en snij ze in vieren. Kruis de tomaten in aan de bovenkant endompel 15-25 seconden onder in kokend water, vervolgens direct in ijskoud wateren ontvel ze. Snij de tomaten in stukken.
Verhit de olie in een braadpan en schep de aubergineplakken, tomaten ensjalotten erdoor. Pers de teen knoflook erboven uit. Roer de suiker, basilicumen wijnazijn erdoor. Maal er royaal zwarte peper boven en voeg zout naar smaaktoe.
Laat het gerecht in een gesloten pan ongeveer 15-20 minuten op heel zachtvuur smoren. Voeg eventueel een scheutje water of witte wijn toe. Schep hetgerecht af en toe om.
Dit gerecht bevat 200 gram groente per persoon.
Lekker met pasta em veel geraspte oude kaas of – met vlees- met een gebakken tartaartje en gebakken aardappeltjes.
